Super Bowl Recipes!!


Dizzy Pig Chicken

- Pick your favorite Dizzy Pig Seasoning (Regular Dizzy Dust, Jamaican Firewalk, and Swamp        Venom work the best!!)

- Big Green Set up for direct grilling
1. Establish Egg temperature to 275-300
2. Season chicken pieces with dizzy rub
3. Place chicken on cooking grid skin side down, cook for 45-60 minutes (reduce time for wings)
4. Rotate cooking grid every 15 minutes for even browning
5. Once a nice brown crust has formed on the bottom, flip chicken and cook for 30 minutes or  until golden brown
6. If using sauce, apply during last 5 minutes on the grill


Jim's Super Bowl Butt

- Marinate Pork Butt day before the game
   1. Cut slits in fatty side of pork butt
   2. Apply sea salt liberally all over pork butt
   3. Take minced garlic and John Henry's Kentucky Butt Rub and apply liberally
   4. Put in Ziploc bag with Sour Orange Juice (3 parts O.J. 1 part Lime Juice) and seal
   5. Pull out 4 hours before you plan to put on grill to allow it to warm up
   6. Establish Egg temp at 260 with plate setter
   7. Put butt on a foil pan a place it in the egg.
   8. Cook for 8 hours (Butt is done when it falls off the bone!!)
